The large temperature difference makes it suitable for producing high-quality tea. [Traditional pan-roasting method with a focus on quality] This method, introduced from China, involves roasting raw tea leaves in a pan heated over an open flame for 30 minutes at 100°C, resulting in a fragrant finish. Pan-roasting tea is only available in a small part of Kyushu, and only one company in Kagoshima produces it. Instead of today's more efficient methods, we focus on quality. We use 100% Benifuuki tea leaves, which are said to contain the much-talked-about methylated catechins, and the pan-roasting method reduces bitterness and makes the tea easier to drink.
